Smoothies

The boys and I have been on a smoothie kick the last week, making smoothies everyday either for breakfast, lunch, or snacks.

Damek has always loved smoothies, and Kyan is starting to really like them as well.

Last week I made my first green smoothie that included spinach, celery, frozen berries & pineapple. Damek liked it and drank a small glass, but didn't ask for seconds as he usually does with smoothies. Kyan tried it and didn't like it. Lee and I ended up drinking the rest as we both liked it.

Last week I threw one together that was a hit, here is the recipe:

Pineapple Yogurt Orange Banana Coconut Smoothie

1 cup coconut milk (not lowfat)
1 cup fresh squeezed orange juice (or bottled)
1 cup plain cream top yogurt
1 cup pineapple (frozen or fresh)
2 bananas

Put it in the blender and mix until smooth. Serves 3 or 4.

The one I threw together this week that the boys both loved and have had I think everyday is this one:

Peanut Butter Banana Coconut Smoothie

1 cup raw cow's milk (or other plain milk)
1 banana
1 tablespoon peanut butter
1 tablespoon extra virgin coconut oil

Mix in blender until smooth. Serves 1.

I think both of these are right up our alley - I need to remember to get coconut milk!
